Easy Lemon Cookies Recipe

Awhile back, we discovered a cookie delivery company unlike any other. Utah is slammed with these delivery companies right now, order cookies, have a hot, gooey, fresh piece of deliciousness delivered right on your doorstep without ever turning on the mixer. But none are doing what these Sweet Glazed Lemon Cookies are doing.

Goodly Cookies is a delivery company that’s not only feeding bellies, but it’s also giving a portion of every cookie sale to Huntsman Cancer Center. Yes, they also happen to be our favorite cookie delivery company in Utah because of the cookies too. And we’ve tried them all. 🙂

We teamed up with Goodly Cookies this summer to create a fresh new cookie and celebrate the sun finally sticking around for a bit. It’s a glazed lemon cookie and you can add white chocolate chips or be a purist and stick with just the cookie.

These glazed lemon cookies are thick, chewy, and have an amazing lemon flavor. But the glaze, oh how I adore that homemade lemon glaze! It is an absolute must for these delicious cookies!!

Lemon Cookies Ingredients

We wanted to make this lemon cookie recipe as easy as possible, hence the short but sweet ingredients list. Here’s what you’ll need to make the lemon cookies:

  • Unsalted butter
  • Cream cheese
  • Brown sugar
  • Granulated sugar
  • Lemon zest
  • Egg
  • All-purpose flour
  • Cornstarch
  • Baking soda
  • Salt
  • White chocolate chips

And for the lemon cookie glaze, you’ll need:

  • Powdered sugar
  • Lemon juice

White chocolate chips add the most amazing creamy goodness to these lemon cookies and help balance the lemon and that sweetly tart glaze. However, sometimes lemon just needs to stand on its own. So whether you’re feeling in the mood for white chocolate or just a plain lemon cookie, these sweet Glazed Lemon Cookies have totally got your back.

How to Make Lemon Cookies

These glazed lemon cookies couldn’t be simpler to make! Here are the basic steps for making this lemon cookie recipe:

  1. Cream together the butter and cream cheese.
  2. Add the two types of sugars and continue creaming.
  3. Add the remaining ingredients, then stir in the chocolate chips.
  4. Scoop the cookie dough onto Silpat-lined baking trays.
  5. Bake for 10 minutes.
  6. Once out of the oven, brush with lemon cookie glaze.

As much as this is going to shock you, I actually love lemon cookies that are no longer hot from the oven like a chocolate cookie would be, so set them aside to cool before digging in.

How to Make Cookie Glaze

This lemon glaze for the sweet glazed lemon cookies is an absolute cinch to make, but you’re going to have to decide how you like it best. You’re going to add powdered sugar to a bowl and squeeze in the juice of one lemon from when you zested into the dough.

Whisk everything and add more of the juice or powdered sugar if you want to change the consistency. You want it almost like heavy cream, but not as thin as milk.

Is There a Cream Cheese Substitute I Can Use?

We used cream cheese in this lemon cookie recipe to make them extra soft and chewy. Cream cheese doesn’t melt down like butter so it gives even more oomph to the cookie, but you totally cannot taste the cream cheese at all.

Cream cheese isn’t always on hand at our house, though 90% of the time it is, but if you’re out just use an equal amount of butter. If you use cream cheese, just make sure it’s at the same temperature as the butter so everything mixes together properly.

Can I Make These With Another Citrus Fruit?

We’ve only made this recipe as lemon cookies, so I can’t speak to how using orange, lime, or grapefruit would work here. I think they’d work well, although you may have to play around with the amount of zest you add into the cookie dough.

Should I Chill the Cookie Dough?

Nope, we don’t think it’s necessary to chill the cookie dough. These cookies don’t spread much in the oven, so no worries there.

Can I Add Other Mix-Ins to the Cookie Dough?

A few readers have suggested adding dried blueberries to the lemon cookie dough, which I think sounds amazing! If you think of any more flavors that pair well with lemon, please let me know in a comment below. Just note that any extra mix-ins you add to these lemon cookies should be dry (like dried fruits or nuts) and not wet (like fresh berries).

Can I Freeze Lemon Cookies?

Yes, you can freeze the baked lemon cookies with or without the glaze on them. If you freeze the cookies after you’ve glazed them, you may want to add wax paper between the layers of cookies to prevent them from sticking to each other.

Can I Freeze Lemon Cookie Dough?

Yes, after scooping the cookie dough it can be frozen in a freezer bag or freezer-safe container for up to 4 weeks. You can bake cookie dough straight from frozen, although the lemon cookies may need an extra minute or two in the oven.

Tips for Making Glazed Lemon Cookies

To get more lemon flavor in these sweet glazed lemon cookies, don’t look to the lemon juice, look to the zest. Those oils that are found in the skin of the lemon pack more flavor than the juice and don’t change the texture, so pile that stuff in there depending on your own tastes. We personally love 2 tablespoons of zest, but again, it’s up to you.

When making the lemon icing for cookies, make sure you squeeze the lemon into a strainer over the bowl or into your other hand so seeds don’t fall in. Also, glaze the cookies after they’ve rested only a few minutes for the best results.

You can store these lemon cookies at room temperature in an airtight container. They’ll stay fresh for a few days, so enjoy them while they last!

Ingredients

  • 1/2 Cup Unsalted Butter, (1 stick)
  • 2 Tablespoons Cream Cheese, softened
  • 1/2 Cup Brown Sugar, + 1 Tablespoon
  • 1/4 Cup Granulated Sugar
  • 1-2 Tablespoons Lemon Zest, to taste - reserve juice for glaze!
  • 1 Egg
  • 2 Cups All-Purpose Flour
  • 1 1/2 teaspoons Corn Starch
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 Cup White Chocolate Chips

GLAZE

  • 1 1/4 Cup Powdered Sugar
  • Juice of 1 Lemon

Instructions

  • Preheat an oven to 350 degrees F.

  • Line baking sheets with silpats, our absolute favorite thing ever

  • In a standing mixer, add the butter and cream cheese and beat until smooth.

    1/2 Cup Unsalted Butter, 2 Tablespoons Cream Cheese

  • Add the brown sugar and white sugar and beat again.

    1/2 Cup Brown Sugar, 1/4 Cup Granulated Sugar

  • Add the lemon zest and egg, and mix at medium speed until incorporated.

    1-2 Tablespoons Lemon Zest, 1 Egg

  • In a separate bowl, whisk together the flour, corn starch, baking soda and salt.

    2 Cups All-Purpose Flour, 1 1/2 teaspoons Corn Starch, 1/4 teaspoon Baking Soda, 1/2 teaspoon Salt

  • Add the dry into the wet along with chocolate chips and mix on low speed, then turn it up to medium speed until the dough comes together.

    1/2 Cup White Chocolate Chips

  • Scoop using a cookie scoop (finally, one that has a warranty as those things break too much!) or 1/4 cup measuring cup onto the pan.

  • Bake for 10 minutes or until set.

  • Remove from the oven and cool for 2 minutes, then brush with the glaze.

Lemon Glaze

  • In a small bowl, whisk together the powdered sugar and lemon juice until smooth.

    1 1/4 Cup Powdered Sugar, Juice of 1 Lemon

Notes

Will keep in an airtight container for 1 week at room temperature, or freeze for up to 6 months.
